Going to try putting it back to what it should be (49T) and go from there!

Just a thought. Knobbly tyres on a pushbike really reduce top speed and take a lot more effort to ride. Do you think they have the same effect on a motorcycle?

The difference between a 52 and 49 tooth sprocket will only reduce your speed in the ratio from 52 to 49 mph.
For all types of gearbox internals, top gear will always be 1:1 , for close, medium, or wide ratio gears.
It could be that your speedo is inaccurate, if the wheel diameter has been altered.  Maybe get someone to follow you in a car to calibrate the speedo, or better still use a Sat Nav.

I used a speedo app on my iPhone when I wanted to know how fast I was going. Works really well.
