I was wondering where I can get some information about Smiths Speedos.

There seem to be many subtypes within each types

Which speedo would have been fitted originally, the parts list is SSM5001-05, did the come grey and black faced?

Or is it that

SSM5001-05 had a grey face,1000 revs per mile.

SSM5007-00 had a black face,1000 revs per mile.

Currently I have a SSN5007/00, 1000 fitted but it significantly under reads. 50mph = 30mph on speedo.

What does the 2 digits after the '/' refer to?

I think the answer to your basic question is that the SSM5001-05 originally fitted to the bike used a 1.25:1 speedo gearbox whereas the SSM5007-00 needs a 2:1 gearbox. With a 1.25:1 gearbox, the latter will show 31 mph when the bike is doing 50 mph.

Thank you, that makes a lot of sense.  I have a SSM5001 on now and reads fine, next time I have rear wheel off I will check the gearbox which I guess is 1.25:1, and as you say (2.0/1.25)*30 =48.
